Honey & Balsamic Salad Dressing (Vegetarian)

We’ve been trying to save money recently. There are some lovely, cheap restaurants around here, but it still doesn’t count as “saving money” to spend $5.00 on a burger and fries, even if that burger is freshly cooked, made with good ingredients, and is really quite nice.

So we went to a box store, bought up a freezer full of food and some other essentials for the fridge & pantry, and we’re surviving the rest of the month off that.

I’m lucky to have the money to do this; the love of my life (hereafter LofL) has been in dire enough financial straits that he’s eaten nothing but rice and tinned tomato sauce for weeks. My uncle, despite his serious degree and serious smarts, is the type of person who prefers freelance and somewhat artistic work, so he’s had to survive off a diet of beans, corn tortillas, and salsa for a very long time. (Probably also beer.)

The kind of frozen food I get (mostly Amy’s) has lots of veg in it already but it’s still, y’know, frozen food, so I supplement it with salads. I never get bored of this dressing.

Anyway, tl;dr — nice salad dressing that keeps for weeks in fridge:

– balsamic vinegar
– olive oil
– garlic powder (less is more!)
– salt
– pepper
– local honey
– dried herbs: thyme, rosemary, oregano, basil are best

1. Combine ingredients in dressing bottle to taste. Close lid. Shake vigorously until honey dissolves in vinegar.
