Weird-Ass Black Beans (Vegan)

Trust me on this recipe. Trust me. I got the base recipe from my sweetheart friend Sophie, who’s too busy and important to answer my letters, and added some random shit in it, and it tasted amazing.

You’ll need:

  • lidded saucepan
  • wooden spoon
  • 1 can low-salt black beans
  • 1 tbsp fried shallots (I get them from the Chinese supermarket)
  • juice of 1/2 fresh orange
  • juice of 1 or 2 key limes
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 pinch dried epazote (if you can’t get it, use oregano)
  • 1 tsp concentrated vegan dashi stock or 2 dried porcini mushrooms (for an umami kick)
  • 2 tbsp fresh chopped cilantro/coriander

1) Put all of the ingredients in the saucepan and cover. Cook over medium heat until simmering.

2) If you’re using the porcini, fish them out. They taste yummy, so you can go ahead and eat them.

3) Uncover, and cook over a low heat until the beans are sticky.
